Aduki Bean Salad comes in three spellings, at least that is what Sara discovered when she went searching for a recipe. Adzuki. Azuki. Aduki. No matter how you spell it, the salad uses pert brown beans, compact and full of protein.

I was not thinking about the protein when I asked her to look for a recipe. I was thinking about all the dried beans I’ve accumulated over the past few years. Many of them are sitting in the basement in bulk plastic bags. Some of them (legumes like green lentils, or red) were ruined by the food moths.

Lately I have felt overwhelmed by the beans in my life, or, more accurately, the beans in my basement. So I vowed to stay away from the health-food store for as long as I could, or at least until I got bored of trying to make a life with beans.
